PCOS-Friendly Teriyaki Chicken with Rice and Cucumber Salad

Ingredients

  • For the Chicken
  • 2 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • ¼ cup low-sodium soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 garlic clove minced
  • 1 tsp fresh ginger grated
  • 1 tbsp sesame seeds optional
  • For the Cucumber Salad
  • 2 cups cucumber sliced
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp low-sodium soy sauce
  • 1 tsp honey or maple syrup
  • ½ tsp sesame seeds optional
  • Fresh cilantro for garnish
  • For the Rice
  • 1 cup brown rice
  • 2 cups water or vegetable broth

Instructions

For the Chicken:

  • Preheat the grill or a grill pan to medium-high heat
  • In a bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger
  • Place the chicken breasts in the marinade and let sit for at least 15 minutes
  • Grill the chicken for about 6-7 minutes per side, or until fully cooked and juices run clear
  • Sprinkle with sesame seeds for garnish

For the Cucumber Salad:

  • In a small bowl, whisk together rice vinegar, sesame oil, soy sauce, and honey
  • Toss the cucumber slices in the dressing
  • Sprinkle with sesame seeds and fresh cilantro

For the Rice:

  • Rinse the brown rice under cold water
  • In a saucepan, bring the water or vegetable broth to a boil
  • Add rice, cover, and reduce heat to low
  • Simmer for 30-35 minutes, or until rice is tender and water is absorbed
  • Serve the grilled teriyaki chicken over the rice with the cucumber salad on the side

Notes

Use cauliflower rice for a lower-carb option
For extra flavor, add chili flakes to the cucumber salad
This dish is great for meal prep and can be stored in the fridge for up to 3 days
