Libby’s Pumpkin Bread Recipe (Moist & Spiced)

This Libby’s Pumpkin Bread is moist, spiced, and full of fall flavor. Made with pumpkin puree and warm spices, it’s a perfect treat for the season or any time you’re craving a comforting, homemade loaf.

Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground cloves
  • 2 large eggs
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • 1 can 15 oz Libby’s pumpkin puree
  • ¼ cup water
  • 1 tsp vanilla extract
  • ½ cup chopped walnuts or pecans optional

Instructions

  • Preheat the oven to 350°F (175°C)
  • Grease and flour a 9x5-inch loaf pan
  • In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves
  • In a separate large bowl, beat eggs and sugar until smooth
  • Stir in vegetable oil, pumpkin puree, water, and vanilla extract until combined
  • Gradually add the dry ingredients to the wet ingredients, mixing just until combined
  • Fold in the walnuts or pecans if using
  • Pour the batter into the prepared loaf pan and smooth the top
  • Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean
  • Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely

Notes

  • For extra moisture, substitute half of the vegetable oil with applesauce
  • You can use ground ginger for a little extra spice
  • This bread freezes well for up to 3 months, wrapped tightly in plastic wrap
