Jiffy Mexican Cornbread Recipe (Easy & Cheesy)

This Jiffy Mexican Cornbread is moist, cheesy, and packed with bold flavors! Made with Jiffy Corn Muffin Mix, jalapeños, and cheddar cheese, this quick and easy recipe is the perfect side for chili, BBQ, or Tex-Mex dishes.

Ingredients

  • 1 box Jiffy Corn Muffin Mix 8.5 oz
  • 1 egg
  • cup milk
  • ½ cup canned cream-style corn
  • ½ cup shredded cheddar cheese
  • 1 small jalapeño finely chopped, seeds removed for less heat
  • ¼ cup diced green chilies canned or fresh
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp butter for greasing

Instructions

  • • Preheat oven to 400°F (200°C) and grease a 9-inch baking dish or cast-iron skillet with butter
  • • In a large bowl, mix Jiffy Corn Muffin Mix, egg, milk, and cream-style corn until combined
  • • Stir in shredded cheddar cheese, jalapeño, green chilies, garlic powder, salt, and black pepper
  • • Pour batter into the prepared baking dish and smooth the top
  • • Bake for 20-25 minutes, or until golden brown and a toothpick inserted in the center comes out clean
  • • Let cool for a few minutes before slicing and serving

Notes

• For extra moisture, add an additional tablespoon of melted butter to the batter
• Swap cheddar for pepper jack cheese for a spicier kick
• Best served warm with butter or honey
