Ingredients

  • 2 lbs russet or Yukon gold potatoes peeled and diced
  • ¾ cup Hellmann’s mayonnaise
  • 1 tbsp yellow mustard
  • 1 tbsp apple cider vinegar
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ cup celery finely chopped
  • ½ cup red onion finely chopped
  • 3 hard-boiled eggs chopped
  • 2 tbsp fresh parsley chopped, optional
  • ½ tsp paprika for garnish, optional

Instructions

  • Boil potatoes in salted water until fork-tender (about 10-12 minutes), then drain and let cool
  • In a large bowl, whisk together Hellmann’s mayonnaise, mustard, vinegar, salt, and black pepper
  • Add cooled potatoes, celery, red onion, and hard-boiled eggs to the bowl
  • Gently fold everything together until evenly coated
  • Refrigerate for at least 1 hour before serving for the best flavor
  • Garnish with fresh parsley and a sprinkle of paprika before serving

Notes

• Yukon gold potatoes hold their shape well and provide a creamy texture
• For extra flavor, add sweet pickle relish or chopped dill pickles
• Best when chilled for a few hours before serving
