Forgotten Chicken Recipe (Easy Baked Chicken & Rice)

Ingredients

  • 4 boneless skinless chicken breasts
  • 2 cups uncooked long-grain white rice
  • 1 can 10.5 oz cream of chicken soup
  • 1 can 10.5 oz cream of mushroom soup
  • 2 cups chicken broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika optional
  • ½ tsp dried thyme optional
  • 1 tbsp butter cubed

Instructions

  • Preheat oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish
  • In the baking dish, mix uncooked rice, cream of chicken soup, cream of mushroom soup, chicken broth, garlic powder, onion powder, salt, black pepper, smoked paprika, and thyme until well combined
  • Place chicken breasts on top of the rice mixture and gently press them in
  • Dot the top with butter cubes for extra flavor
  • Cover tightly with aluminum foil and bake for 1 hour and 15 minutes
  • Remove foil and check if the rice is tender and the chicken is cooked through (internal temperature should be 165°F or 75°C)
  • Let rest for 5 minutes before serving

Notes

• For extra flavor, season the chicken with additional spices before placing it in the dish
• Use brown rice for a heartier version, but increase the baking time by about 15-20 minutes
• Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave
