Ingredients

Chicken Ingredients

  • 2 lbs chicken breasts cut into strips
  • 1 cup panko breadcrumbs
  • 1/2 cup flour all-purpose
  • 2 eggs beaten
  • 1/2 tsp salt to taste
  • 1/2 tsp black pepper to taste

Teriyaki Sauce

  • 1/2 cup soy sauce low sodium preferred
  • 1/4 cup honey
  • 2 tbsp rice vinegar

Instructions

  • Set up a breading station with three bowls: flour, beaten eggs, and panko breadcrumbs mixed with salt and pepper.
  • Coat chicken strips in flour, then dip in eggs, and finally coat with panko breadcrumbs.
  • Heat oil in a pan over medium heat. Fry chicken until golden brown and cooked through, about 4-5 minutes per side.
  • In a separate saucepan, combine soy sauce, honey, and rice vinegar. Simmer for 5 minutes until slightly thickened.
  • Toss the fried chicken in the teriyaki sauce and serve immediately.

Notes

Serve with steamed rice and vegetables for a complete meal.
