Preheat the Blackstone griddle to medium-high heat and lightly oil the surface
In a small bowl, mix olive oil, lemon juice, garlic, parsley, thyme, salt, pepper, and smoked paprika
Pat the salmon fillets dry and brush the herb mixture evenly over both sides
Place salmon on the griddle, skin-side down if using skin-on fillets
Cook for about 4-5 minutes per side, or until the salmon easily flakes with a fork
Remove from heat and serve immediately with extra lemon wedges
