Ingredients

  • 1 large head cauliflower about 2 pounds, cut into florets
  • 1 pound mixed mushrooms cremini, button, shiitake, sliced
  • 3 tablespoons butter
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 tablespoon fresh thyme leaves or 1 teaspoon dried
  • 1 tablespoon fresh rosemary chopped (or 1 teaspoon dried)
  • 1/2 cup vegetable or chicken broth
  • 1/3 cup grated Parmesan cheese
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons fresh parsley chopped
  • 1/4 teaspoon red pepper flakes optional

Instructions

  • Preheat oven to 425°F (220°C).
  • Clean mushrooms with a damp paper towel (don't wash them). Slice into even pieces.
  • Heat 1 tablespoon butter and 1 tablespoon olive oil in a large skillet over medium-high heat.
  • Add cauliflower florets and cook for 5-6 minutes until they begin to brown, stirring occasionally.
  • Remove cauliflower to a plate and set aside.
  • In the same skillet, add remaining butter and oil. Add mushrooms and cook without stirring for 2-3 minutes until they begin to brown.
  • Stir mushrooms and continue cooking for another 3-4 minutes until golden brown.
  • Add garlic, thyme, and rosemary, stirring for 1 minute until fragrant.
  • Return cauliflower to the skillet, add broth, and season with salt and pepper.
  • Transfer everything to a baking dish, sprinkle with Parmesan cheese, and bake for 10-15 minutes until bubbly and golden.

Notes
